I always enjoy reading this excerpt from Napoleon Hill's 1928 book The Laws of Success in Sixteen Lessons. It helps keep me grounded by reminding me of Gringaux's Seafood Kitchen — a $3.8M seafood restaurant I opened in October 2006 and unfortunately closed 14 months later...

A friend of mine, who is also in the restaurant business, gave me some 'words of wisdom' soon after closing my restaurant. He said, 'Russell, the restaurant business is like baseball. As long as you're batting a high average, you'll do OK.'  That was one of the best things I could have heard.     

With the current success of Gringo's, it's always humbling to remember these life lessons. Thank you to all of our loyal guests, who have become a part of the Gringo's family. We couldn't do it without you!

Shhh…The Secret's in the Sauce!

Everyone is always asking about our amazing Amazon Sauce Recipe. We know — it's the best! So, we've decided to share our secret! {There may be some trial and error to get it just the way you want, but that's part of the fun, right? Helpful Hint: If you like garlic, go heavy on it!}

Amazon Sauce Recipe
•	5 & 1/3 cups of Mayonnaise 
•	1 cup water
•	8 oz. chopped cilantro
•	2 & ½ oz. jalapeno
•	1 ¾  oz. fresh garlic
•	1/3 cup white vinegar
•	½  cup Cotija cheese
•	1/3 tsp. salt to taste

Mix all ingredients {except the mayo} in a blender or food processor until completely blended. 
Then, add to the mayo and mix well. Drizzle this awesome sauce over your favorite salad, smother fajitas or use as a dip!
