Established in 1993, Gringo’s Tex Mex came to life when Russell Ybarra had the opportunity to take over a building in Pearland that had previously housed four failed restaurants. Russell’s philosophy of always serving the highest quality Tex-Mex at the best value possible has allowed him to grow from a single unit to 24 locations, including Jimmy Changas, Bullritos, The Lunch Box and Burger Libre, with three more locations in development.

Thirty-one years later, Russell published his first book, Enchilada Entrepreneur: Ten Lessons and Life and Business from the Founder of a Successful Tex-Mex Restaurant Group. *All profits from the book are donated to the PTSD Foundation of America’s Camp Hope.
